Curd is one popular food item that sits perfectly beside most Indian foods. We Indians just can’t do without our portion of curd in our meals. We make curd rice, and raita out of it, serve it with Biryani, marinate our meat in it, and whatnot.
Curd rice is something I can’t give up on, and my cravings to have it inspired me to prepare a recipe that can fit into the Keto lifestyle. Since you can’t have rice and regular curd in Keto Diet, I have replaced rice with cauliflower rice and regular curd with Greek Yogurt or hung curd and managed to get you a substitute of Curd rice that we all Keto people can have guilt-free.
It will give a sense of satisfaction to your taste buds. It simply adds brilliant south Indian flavors to any dish and even to a bland dal. Let’s jump straight to the quick recipe.
Keto Cauliflower Curd Recipe
Equipment
- grater
- Microwave
- Pan
- Bowl
Ingredients
- 1 cup cauliflower rice
- ¾ cup full-fat greek yogurt (hung curd)
- salt adjust to taste
- 1 tbsp coriander leaves
Tempering
- 1 tsp ghee (clarified butter) (Or coconut oil)
- 2 tbsp raw peanuts
- 1 tsp mustard seeds
- 2-3 red chilies
- 1 stalk of curry leaves
- 1 tsp ginger grated
- a pinch asofoetida (hing)
Instructions
- Start with separating cauliflower into florets. Wash them thoroughly and then grate them with the help of a grater or food processor to look like fine rice.

- Now, take a pan and add cauliflower rice and salt just how much you like. Saute it for 2-3 minutes till the rice is cooked well and tender.
- Or, You can also microwave cauliflower rice and salt for 2-3 minutes in a microwave-safe bowl. Keep aside the prepared cauliflower rice to cool down and prepare tempering in another pan.
- Now for tempering, take another pan and heat ghee or coconut oil in that. Once the oil is hot, add raw peanuts and saute till they are nicely roasted.
- After that, add mustard seeds, and dry red chilies, let them splutter.
- Now, add in chopped ginger, curry leaves, and hing (asafetida). Saute them for a few seconds. The tempering is ready, keep that aside.
- Now, take the cauliflower rice and add in greek yogurt, salt and and give them all a good mix.
