Some days, my Keto journey feels more like a rhythmic dance, balancing flavour and discipline. And, this is what makes me feel happy while making healthy eating choices. After many years of cooking on the Keto diet, I realised that the simplest meals are often the happiest. For example, a handful of fresh ingredients tossed together with a little ghee and some fresh herbs. It can instantly create a wonderful meal, spreading a comforting aroma in your kitchen. This Keto Coriander Veg Medley Tikka recipe was created on one of those days when I wanted to prepare something healthy and nutritious, yet effortless at the same time.
It’s one of those dishes that would take only 15 minutes to prepare and require minimal chopping. Even with minimal effort, you get a delicious dish that takes only 20-25 minutes to prepare and tastes like you put in hours. All the ingredients in this recipe are ideal for your Keto way of life because they include low-carb veggies, healthy fats, and ample protein from paneer. Plus, the vibrant coriander-mint zing makes every bite feel refreshing.

Ingredients:
- 1.5 tbsp ghee/clarified butter
- 4-5 green chillies
- 1 tbsp ginger
- 100g mushrooms
- Diced onion half
- 150 g green & red capsicums
- 100g paneer/cottage cheese
- 3 tbsp coriander mint paste
- 1 tsp red chilli powder 1 tsp
- 1/2 tsp black pepper powder
Instructions:
1. Heat the ghee in a pan over low-medium flame.
2. Once it’s warm, add 4 to 5 green chilies and 1 tbsp grated ginger. Sauté well.
3. Add 100g whole mushrooms and cook for one to two minutes.
4. Toss in chopped onion and green & red capsicums. Stir well and let all veggies soften a bit.
5. Now, add paneer cubes while continuously stirring on a low-medium flame.
6. Add the coriander-mint paste to it and mix well. Make sure that all veggies get nicely coated for perfect taste. Keep sautéing intermittently.
7. Once it’s cooked and the flavors are well-blended, add red chili powder and black pepper powder. Mix well.
8. Serve hot in a bowl and enjoy.
