I love to bake my own bread, as there’s something incredibly comforting about it, especially when it seamlessly fits my Keto lifestyle. Today, I’m going to share with you my recent favourite Keto peanut bread recipe. This nutty breakfast companion is wholesome yet indulgent, without compromising on Ketosis. The best part is that it’s perfectly moist, fluffy, and light with amazingly nutty flavours. It’s more like a yummy treat for slow mornings or a quick mid-day bite, all while staying deliciously low-carb.

What I love most about this bread is that it’s clean, Keto-friendly, sugar-free, gluten-free, and absolutely satisfying. Ingredients:
* 3 Large eggs
* 1 cup peanut butter
* 1/2 cup (or 120 ml) almond milk
* ½ cup granulated sweetener
* 1 cup almond flour
* ¼ cup coconut flour
* 1 tbsp baking powder
* 1 tsp sea salt (if your peanut butter is unsalted)
Instructions:
1. Start with preheating your over to 180°C / 350°F and alongside line a loaf pan using parchment paper.
2. Now, take a food processor or an electric mixer, beat eggs for 2 minutes or until they fluff up and become double in size.
3. Add granulated sweetener along with almond milk, and peanut butter. Blend everything well until you get a creamy, smooth batter.
4. Take another bowl to mix coconut flour, almond flour, salt, and baking powder. Add this dry mixture to the wet mixture and combine everything well.
5. Keep this batter aside for 3 minutes to ensure coconut flour absorbs moisture. Keep checking consistently until it’s soft. Consider adjusting with almond milk or coconut flour, if needed.
6. Pour this batter into a lined loaf pan and put it in the pre-heated over for 60 minutes. Check at 45-50 minutes. In case it becomes brown rapidly, cover it loosely with foil.
7. Let the bread cool off completely before you slice it.
