- 2 tbsp olive oil
- 2 tbsp butter
- 4 cups of chicken stock
- 1/2 tsp dried thyme
- 12 cloves of peeled garlic
- 20 cloves of unpeeled garlic
- 1/2 cup whipping cream
- 1 medium finely sliced onion
- 680 g cooked chicken thighs or breasts
- Salt & pepper as per your taste
Put unpeeled garlic cloves in a baking dish and place it in a preheated oven (at 350F). Also, add salt, olive oil, and pepper for coating.
Keep roasting it for around 35 minutes until the garlic turns golden brown.
Take out the roasted garlic cloves and let them cool.
Separately, take a large saucepan and place it on medium heat along with butter to melt. Now, add onions and let them cook until translucent.
Add roasted garlic with additional peeled garlic cloves and thyme. Mix well and let it cook for 2 to 3 minutes until a garlicky aroma spreads around your kitchen.
Add chicken stock to it and let it simmer for 20 minutes.Now, make the puree of this mixture in a blender. In the puree, add whipping cream to a pan along with cooked chicken.
Add salt and pepper to taste.Serve hot!
