Keto Indian Roasted Vegetables

Today, I am thrilled to share with you one of my recent culinary adventures, a mouthwatering treat that combines the vibrant flavours of Indian cuisine with the wholesome goodness of roasted vegetables. Introducing my latest creation: Keto Indian Roasted Vegetables!

The recipe is a medley of colourful veggies bathed in a tantalizing tomato purée infused with aromatic Indian spices. With every bite, you’ll experience a symphony of flavours. And the best part? This dish is entirely Low Carb, making it a fantastic alternative to the traditional Aloo Gobi while staying true to your Ketogenic Diet.

This dish will elevate your dining experience to a whole new level. It’s a perfect side dish for any main course, or can even stand alone as a satisfying vegetarian meal.

Cook time 20 minutes

Ingredients

Vegetables

Cauliflower Heads 225 grams
Green Beans, Sliced 170 grams
Whole Mushrooms, Quartered 110 grams

Masala

Tomato Purée 170 grams
Olive Oil, Ghee, or Melted Butter 2 tablespoons
Fresh Ginger, minced 2 teaspoons
Garlic clove, minced 1 clove
Chilli powder (raw ground chillies) 1/2 teaspoon
Garam Masala 1/4 teaspoon
Turmeric 1/4 teaspoon
Salt and pepper As per your preference

Garnish

  1. Sliced Green Onion
  2. Chopped Cilantro

Directions

  1. Take a non-stick frying pan and put it over medium-high heat on a gas top, then add the oil to the pan.
  2. When the oil is hot, add the vegetables, ginger & garlic, and stir.
  3. Sauté until veggies are crisp and tender.
  4. Turn the heat down to medium and add the tomato sauce and spices.
  5. Cook until the sauce reduces a bit and the vegetables are cooked.
  6. Season to taste with salt and pepper. Serve.
