Keto-Shrikhand Recipe

India is a land of exotic spices and enchanting flavors. We have recipes that have been replicated in every corner of the world, aka the chicken tikka. Our cooking styles range from simple to most intricate. We have dishes according to seasons, occasions, and festivals. From that treasure box of Indian food, I have for your today is Keto Shrikhand, the recipe of a dessert that is totally pro-Keto. It is made with hung curd and the texture can be compared to any scoop of premium ice cream.

The dish is called Shrikhand and it originates from the state of Gujarat and Maharashtra. In India a meal always end on a sweet note. I used to love desserts and sweets before I went on Keto. And I missed the dessert in the end. Now I make a bowl of Shrikhand on a daily basis and eat it as dessert. It is nutritious and very easy to make.

Shrikhand is primarily made with hung curd, or yogurt from which water or whey has been drained out. Traditionally it is made in the Kesar and Elaichi flavor, and some people like to add fruit puree to it. I use a muslin cloth to drain the whey from the yogurt. You can use any juice strainer, just ensure that the mesh is very fine. Today I am going to teach you how to make Shrikhand in saffron and cardamom flavors. The combination of saffron, cardamom and hung curd, is a winning one. And don’t worry if you don’t have saffron just use green cardamom. You can also make hung curd, keep it in the fridge and make Shrikhand whenever you feel like.

Instructions

How to Make Hung Curd

  • Place your strainer on a wide bowl. Now place your cheese cloth or muslin cloth on it.
  • Pour the curd/yogurt on it. On an average a liter of milk makes about four to five cups of yogurt.
  • You can use any plain and fresh yogurt. Try and look for a brand that is high on fat.
  • I make my own yogurt at home with full cream milk.
  • Please ensure that the curd/yogurt is not sour at all.
  • Please ensure that the curd/yogurt is not sour at all.
  • Bring the edges of the muslin cloth close to each other. Now tie one corner around it. Make sure it is tight.
  • Press gently and the whey will start dripping from the cloth.
  • If you have a hook in you refrigerator then hang it there, with a bowl below. Or hang it anywhere in the kitchen and leave a bowl below it.
  • Forget about it for at least four to five hours. Don’t worry if you forget about it and remember it in the morning it will be just fine.
  • When you hang the cloth ensure that the whey does not touch the strainer or cloth.
  • When the curd is ready remove it from the cloth and put in a sealed container in the fridge.
  •  Don’t throw the whey you can use it any gravy or while making brown rice.
  • The hung curd should resemble cream cheese. Generally a kilogram or four cups of curd will yield about 400gms of hung curd.
